Cafe Rio

I'm on my way to Las Vegas for the weekend; my husband has a scheduled work meeting in Vegas, and since we haven't had a vacation since the summer before we got married, we thought we'd take a much-needed long weekend away after his meetings wrapped up. I'm currently at the Salt Lake City International Airport, awaiting my early afternoon flight (my husband caught an earlier flight); since it was lunchtime, on my way to the gate I stopped off at Cafe Rio.

I wish they had offered smaller portions, so I could try a few different things. I had a salmon quesdilla, which was pretty good.

I also had a burrito with chile roasted beef. The beef was really tender, but the burrito could have used some salt.
